Collaboration of FTP Unud Lecturers, Carry out Product Development of Cascara Crispy Brownies as a Healthy Snack Based on Coffee Skin by-products High in Fiber and Antioxidants, and Economical Value
Faculty of Agricultural Technology, Udayana University lecturer Sayi Hatiningsih, S.TP., M.Si., joined the community service team with I Komang Budi Mas Aryawan, S.Pd., M.Pd., I Made Endra Kartika Yudha, S.E., M.Sc., Prof. Dr. Ir. Bambang Admadi H., M.P., and Ratna Sari Widiastuti, S.Si., M.Sc., and students of the Faculty of Agricultural Technology of Udayana University Alizza Zahira Prameswari, Jason Patrick Kenardi, Ni Made Mutia Pradnyawangi, Ida Ayu Agung Prapita Hermayuli, I Putu Agus Artawan, Nadiyah Az-Zahra Puspita Rani, Putu Trisna Maharani, Wayan Arlyana Anantha, and I Wayan Mulya Adi Saputra, through the Directorate of Research, Technology, and Community Service (DRTPM) Ministry of Research and Technology in 2024, develop arabica coffee skin by-products into Cascara Crispy Brownies as a snack that is not only delicious, but also high in fiber and antioxidants and has economic value, with the Dharma Kriya Farmer Group, Belantih Village, Kintamani District, Bangli, Bali.
Through this PKM activity program, it shows that 95% of partner communities are satisfied with the PKM activities carried out by the team. From this PKM activity, there are several benefits obtained by the partner community, namely: (1) partner communities gain skills and knowledge in making Cascara Crispy Brownies (Crispy Brownies with the addition of coffee skin), and digital marketing through Shopee marketplace sales, accessible through the link https://id.shp. ee/jAW7ms6, (2) partner communities have motivation for entrepreneurship, and become more active, and have creativity in developing the Cascara Crispy Brownies business as a source of additional income to improve the welfare of coffee farmers, (3) reduced coffee skin waste contributes to the sustainability of the people's coffee plantation business in Belantih Village, and the environment because by-products/coffee skins are utilized into “zero waste” economic value products. As for the sustainability of this PKM program, namely the training program not only makes Cascara Crispy Brownies products but other products made from coffee skin, and the use of digital marketing using social media Facebook, and Instagram.
