Lecturer of TIP FTP Unud Study Program Proves Seredele "Balinese Version of Nato" which is Rich in Antioxidants

Seredele is a soy-based fermented food, typical of Gianyar, Bali. There are 4 seredele producers, namely Beng, Sukawati, Blahbatuh and Buruan Villages. Seredele contains isoflavone compounds and fiber which are useful in lowering cholesterol levels and have the potential as antioxidants. Seredele has a resemblance to natto, a fermented soy-based food found in Japan. The difference is that natto is fermented using bacteria, while seredele is fermented naturally. Natto is rich in bioactive compounds that can function as antioxidants. Later it was discovered that research on the content of bioactive compounds and antioxidant activity in seredele produced by producers in Gianyar Regency had never been carried out. Lecturer in the Agricultural Industrial Technology Study Program, namely Dr. A. A. Made Dewi Anggreni, S.TP., M.Si. and Dr. I Wayan Arnata, S.TP., M.Sc. conducted research on the bioactive compounds and antioxidant activity of the seredele.

 

Research conducted proves that seredele produced in Gianyar regency contains bioactive components such as total phenol, vitamin C, beta-carotene, alpha tocopherol which function as antioxidant activity. According to the results of the research conducted, it was found that seredele produced in Gianyar Regency had the highest antioxidant activity which was classified as strong antioxidant activity.

 

Dr. A. A. Made Dewi Anggreni, S.TP., M.Si. as the Research Team also said that there were differences in how seredele was made for each manufacturer. However, in general the process of making seredele is as follows: raw soybeans are boiled and then fermented (± 2 days). There are producers who carry out the process of washing and/or soaking the soybeans before boiling. After the fermentation is carried out, it is continued by steaming or some are immediately given spices (garlic, galangal, turmeric, cayenne pepper, and salt). She also said that after adding the spices, seredele ready to be consumed or marketed, she said.
